Ingredients
  

Salad Ingredients

  • 8 oz Arugula
  • 1 large Apple chopped
  • 1-2 Persian Cucumbers or 1 English Cucumber
  • 1 large Orange peeled & sliced lengthwise
  • Handful of Walnuts
  • Handful of Fresh Mint

Salad Dressing

  • 2 Tbsp. Extra virgin olive oil
  • 1 large Lemon squeezed
  • salt to taste

Instructions
 

  • Start by washing the arugula and drying it. Take a paper towel and gently tap to remove excess water.
  • Next, chop all your fruits and veggies.
  • Mix the Olive oil, Lemon juice and Salt - keep aside.
  • Take a serving bowl, add the arugula, chopped fruits & veggies & Walnuts.
  • Pour over the dressing & gently toss everything together.
  • Top it off with fresh mint and serve.

Notes

If you want to make this salad heartier and eat it by itself, add a cup of cooked quinoa to it and you have a heavier and heartier salad that's perfect for a busy days lunch or dinner.
