1Cupof chopped peppersuse red/orange or yellow for more vitamin C
1Cupof cherry tomatoes or grape tomatoes sliced into halves
2Tbsp.Dill
2handfuls of micro greens for topping
Dressing
2Tbsp.EVOO
2Tbsp.Lemon Juice
salt to taste
Instructions
Combine the dressing ingredients and keep aside.
Toss the lettuce in half the dressing, take a place and add the lettuce.
Toss the cucumbers, tomatoes, peppers and Dill with the remaining dressing.
Add the cucumber mix on top of the lettuce top it off with micro greens and enjoy!
Notes
You can modify this to add your favorite veggies or even fruits like apples, peaches, grapes. They all will taste equally amazing. Do try and tell me what you think.
You can also customize this simple dressing by adding some Dijon mustard, black pepper or even honey or maple syrup for extra kick. But for this recipe I wanted to keep things simple.
Make the dressing in large batch ahead of time, so that when you are in a time crunch you can quick grab it.
