Mix all the ingredient and knead into a soft dough. The dough initially is a little soft. Let it rest for 1 hour. At 1 hour mark, add 2 tsp of oil and knead again (1-2 mins). The dough is very elastic by now. Let it rest another 30 min.
Note: This dough is super elastic and soft but not sticky. Which will make beautiful wraps.
Boil one sweet potato and mash it.
Dry roast Frankie Masala ingredients (1 to 6) on low heat until fragrant and brown. Make sure it doesn't burn. Takes about 2-5 mins. Add ingredients 7 - 9 and grind to a fine powder.
Take the mashed potato and add 4 Tbsp of the ground Frankie powder and leave the rest for later.
Shape the potato mixture into kebabs shape. The mixture is super soft but its ok.
Grease a pan and roast them on each side for 2 mins.
Preheat oven to 400 deg. Take a slightly greased baking sheet, line the kebabs and let them bake for 24 mins. About 12 mins on each side.
While the kebabs are baking lets make the wrapsDivide the dough into 9-10 lime size balls. Take each dough ball, sprinkle the surface with flour and roll them into thin rounds. As the dough is elastic the wraps will not brake.
Heat a pan and brush it with some oil. Add these wrapper and let them cook on medium heat for 1 min on each side. Make sure they don't fully cook.
By the time all the wraps are done. The kebabs will be ready too. Let them cool down for 5 mins.
Heat the pan again and add the wrap. Let it cook for 1 min on medium and turn and reduce the heat to low. Add 1 tsp of green chutney, 1/2 tsp of the Frankie powder, place the kebab and add 2-3 tsp of ketchup. Top it with finely chopped red onions, cilantro and finely chopped picked jalapenos.
Roll the wraps bottom up and fold them from the sides. That's it your Frankie rolls are ready to go.
