This dish is one of those recipes that perfectly pairs with any dish and loaded with tons of flavor from the citrus and the apples.
This arugula salad needs minimal ingredients and can be easily customized with your favorite fruits and veggies. All you need is arugula, 1 apple (red or green), 1 orange, 1-2 cucumbers, walnuts, fresh mint, olive oil and lemon juice. You can also add grapes, pears, peaches, plums and fresh mint/basil.
Regardless of the ingredients you choose, its gonna be delicious & fresh. Just make sure to include a combination of elements like sweet, citrus, nuts and fresh herbs.

Arugula Salad Ingredients:
- 8 oz Arugula
- 1 Red Apple or Green Apple chopped
- 1 Orange or Grapefruit peel and sliced lengthwise
- 1-2 Persian Cucumbers chopped
- Handful of Walnuts
- Handful of Fresh mint
Salad Dressing:
- 2 T Extra Virgin Olive Oil
- 1 Lemon
- Salt
Directions:
- Start by washing the arugula and drying it. Take a paper towel and gently tap to remove excess water.
- Next, chop all your fruits and veggies.
- Mix the Olive oil, Lemon juice and Salt – keep aside.
- Take a serving bowl, add the arugula, chopped fruits & veggies & Walnuts. Pour over the dressing & gently toss everything together. Top it off with fresh mint and serve.
