Did you know that mango’s are know as the King of Fruits? And there are 100’s of varieties of mangos each varying in size, color & taste. Some are known for its juiciness and some are for its flesh. There are also different varieties for cooking & pickles.

Mango’s are originally from the Indian subcontinent and have been cultivated in other parts of south east Asia as well. Over the years, the seeds of mangos have traveled across the globe to the other side of the world like Mexico, Jamaica & other parts of the Caribbean. Based on the soil and region they grow in, their taste is widely different. To me the best version of mangos are from India. If you ever get a chance to try them, don’t skip it.

You can literally use this mango tofu as a protein replacement for any recipe. For example: salads, sandwiches, your favorite bowls, burgers & even as a pizza topping. Here are a few other recipes that I used this Mango Tofu: Sourdough Sandwich, Spicy Mango Tofu Salad with Raita

Benefits of Mango:

  • Mango’s are a great source of Vitamin C, Potassium, Magnesium & Polyphenols. Polyphenol is an antioxidant compound found in plants and they are known to manage high blood pressure levels and keep your blood vessels healthy and flexible, promoting good circulation. Plus, it’s also known to protect hair follicles against damage from oxidative stress
  • Vitamin C is known to fight against aging and producing collagen. Collagen is what makes up your skin structure and gives it flexibility.
  • Potassium on the other hand is important for the optimal functioning of our nervous system. Low levels of potassium is known to cause fatigue, muscle cramps & numbness in your legs and muscles. That is why it is highly recommended to get enough amounts of potassium. Especially if you are an athlete and work out regularly.
  • Mango’s are also know for their immune boosting properties. It is high in Vitamin A that is known to boost our immune system and support our skin & eyes. On the contrary, low deficiency of Vitamin A is linked to greater risk of infection, dry eyes and vision problems.

Benefits of Tofu:

  • Tofu is high in protein and is a great meat alternative. Its naturally gluten free and low in calories.
  • It may help reduce bad LDL cholesterol.
  • Due to its estrogen-agonist or estrogen-antagonist properties, it may help relive symptoms of menopause.
  • Protein, and particularly soy protein, may enhance renal function, and it could have benefits for people who are undergoing dialysis or kidney transplantation.
  • Tofu contains all nine essential amino acids. It is also a good source of iron and calcium along with the minerals manganese and phosphorous. In addition to this, it also contains magnesium, copper, zinc and vitamin B1.

Notes:

  • You can use the grated Mango, Turmeric & salt concoction without fermenting it.
  • The minimum fermentation time for the Mango is 24 hr.
  • Always use clean utensils and hands when fermenting foods.
  • When using the fermentation method, always make sure to check on your mango everyday and give it a swirl.
  • You can freezer the fermented mango up to a year in the fridge. Additionally, you can use this to mix to make mango lentils. Just replace the tomatoes with mango. I promise mango lentils taste absolutely delicious. Give it a try.
  • Searing the tofu before it is baked is important for 2 reasons. First, it will give it a nice charred color and will help the tofu absorb the mango flavors better.
  • The final baked mango tofu will last at least up to 2 months in the freezer. Just add them to a zip lock and store them in the freezer.
  • Finally, add this to make any of your favorite bowls, burgers, sandwiches or even to your pizza.

Ingredients
  

Fermented Mango Ingredients

  • 1 Cup grated raw mango This variety is hard to touch and at least 3/4 % of the fruit color is green
  • 1/4 tsp. Turmeric
  • 1 tsp. Salt

Marinade Ingredients

  • 1/4 Cup Red onion
  • 1 tsp. Coriander Powder
  • 1 tsp. Cumin Powder
  • 1/2 tsp. Turmeric
  • 1 tsp. Chili Powder
  • 1 tsp. Jagger or raw cane sugar
  • 1 Tbsp. Oil
  • Salt as needed

Mango Tofu Ingredients

  • 1 block Extra firm organic Sprouted Tofu
  • 1-2 Tbsp. Oil

Instructions
 

  • Mix the grated mango with salt & turmeric. Place in a air tight jar and place it on the counter for at least 24 hrs. and up to 4 days. Make sure to open and give it a swirl once every day. This process will help in the fermentation of the mango that will create gut friendly bacteria. After 4 days, it can be stored in the fridge and used later. This will last up to a year in the fridge
    Grated Mango
  • Blend all the marinade ingredients along with the mango into a smooth paste.

  • Wrap the tofu in paper towel and place it in the microwave for 2 mins.
  • Remove the paper and wrap it again in dry paper towel and place a heavy object for 20 mins to remove all the remaining water. This will ensure the tofu to soak up the flavors better.
  • Cut the tofu into thin slabs or into desired shape.
  • Coat the marinade on all sides of tofu. Skip this if running short on time – let them rest for 30 to 60 mins.
  • Heat a frying pan and add a little oil, fry the tofu on high for 2 mins on each side. This process will give a nice char to the tofu.

  • Remove & place on a baking sheet and coat them with the marinade again on both sides.
  • Pre-heat the oven to 420 deg.
  • Place the tofu in the middle rack for 10 mins.
  • After 10 mins flip and coat the open side with the marinade again. And put them back in for another 10 mins. Make sure the oven temp is still at 420.
  • Remove, rest and serve with salad, sandwiches or as burger patties. You can also freeze these for up to 2 months in the freezer. Just place them in a zip lock bag and freeze them.
