I love carrot cake. Carrot cake is one of the best desserts of all time. It’s perfect for the fall weather, it has the right amount of spices, sweetness and texture to cozy up your morning. Enjoy it with a warm cup of coffee while watching the birds chirping in your back yard and watching the leaves turning orange. Sounds so good right? Now imagine the same scene with a healthier version of the carrot cake?! These carrot cake oats have the right amount of sweetness, crunch and it’s the prefect replacement for a sugar loaded cake. Imagine, having your cake and enjoying it too. Plus, they are super easy to make, loaded with vitamins, mineral and anti-oxidants that will kick start your morning.

Did you know that Oats are the breakfast of the champions?! Because this super food is not only easy to digest but it also regulates our digestive system, controls blood sugars and even regulates female hormones due to its support for insulin sensitivity. Insulin sensitivity has been directly linked to diabetes, low immune response, slow wound healing, nerve disorders, tiredness and last but not the least fluctuation in female hormones!

The best time to eat these is on an empty stomach especially after a long night/day of fasting. As this is when our body is ready & waiting to absorb the food and turn it into energy that fuels the rest of our day. On the contrary the foods you want to avoid on an empty stomach are high glycemic foods such as rice, bread and pasta which are immediately broken down by our stomach and turned into sugars that in turn mixes with the blood stream. Consequently this process leads to increased blood sugar levels. So a great alternative as opposed to high GI foods is Oats. They are filling, loaded with vitamins, fiber & nutrition. At the same time, they are slowly absorbed by our body without increasing blood sugar levels or causing insulin spikes. Plus, they are also Gluten Free.

Note: You can replace the cardamom with vanilla essence or any other natural flavoring that you like. But the cardamom really takes it to the next level. So I highly recommend you try it with cardamom.

Ingredients
  

  • 1 Cup Old fashioned rolled Oats
  • 1/2 Cup Milk of choice (Almond milk will be great for this)
  • 1 Cup Water
  • 1 Tbsp. Maple Syrup depending on how sweet you like it or use or 1 T raw cane sugar If avoiding sugars, add a small mashed ripen banana or 2 tsps. of stevia.
  • 2 small Carrots shredded
  • 2 Tbsp. Walnuts roughly chopped
  • 8 pieces Almonds
  • 1 tsp. Hemp seeds – optional
  • 1 tsp. coconut oil or ghee

Instructions
 

  • Take a pot and a tsp. of coconut oil or ghee.
  • Once the oil is hot, add the cardamom pod. Until it starts to smell aromatic.
  • Next, add the milk and water and bring it a boil.
  • To the boiling liquid add the oats and cook for 2 mins.
  • Next, add the mashed carrots along with nutmeg, cinnamon and sugar (if using mashed banana hold off). Cook for another 2 mins.
  • Give them all a good whisk and let it cook for just a min or 2 and turn off the heat.
  • Skip this step if using maple syrup: add the mashed banana & stevia for sweetness and mix.
  • Once off the stove – add the roughly chopped walnuts, almonds, hemp seeds and any choice of toppings.

Notes

  • Instead of maple syrup, you can also use date syrup which also have low Glycemic Index. 
  • Adjust sweetness as needed.
