When we think of spring, we think of all the colorful trees and flowers blooming all over the place. I live in Washington DC, so for me it’s Cherry Blossoms blooming all over the city. Daffodils & Roses blooming on every street corner. Butterhead lettuce in the front yards of most houses. The view and the feeling of spring is just marvelous here in DC. Everything is renewed and fresh. It almost feels like a new lease on life.
Speaking of spring, when I think about all the beauty around me, I want the same thing on my plate as well. Something colorful, fun and easy on the eyes and stomach. So to keep up with my surroundings beauty, I made this quick and easy spring salad with butter head lettuce topped with amaranth micro greens.
Did you know microgreens are super foods and have 9 times the nutrition value compared to the original mature greens. They are super easy to incorporate into your diet. Add them to your toast, salad, buddha bowl or eat them by itself as snack. They are a nutrition powerhouse and a must have pantry ingredient in my opinion. 🙂
Good to know Tips:
- You can modify this to add your favorite veggies or even fruits like apples, peaches, grapes. They all will taste equally amazing. Do try and tell me what you think.
- You can also customize this simple dressing by adding some Dijon mustard, black pepper or even honey or maple syrup for extra kick. But for this recipe I wanted to keep things simple.
- Make the dressing in large batch ahead of time, so that when you are in a time crunch you can quick grab it.
Ingredients:
- 1 Head of butter Lettuce – washed and separated
- 2 Persian cucumbers
- 1 Cup of chopped peppers (use red/orange or yellow for more vitamin C)
- 1 Cup of cherry tomatoes or grape tomatoes sliced into halves
- 2 Tbsp. Dill
- 2 handfuls of micro greens for topping
Dressing:
- 2 Tbsp. EVOO
- 2 Tbsp. Lemon Juice
- salt to taste
Directions:
- Combine the dressing ingredients and keep aside.
- Toss the lettuce in half the dressing, take a place and add the lettuce.
- Toss the cucumbers, tomatoes, peppers and Dill with the remaining dressing.
- Add the cucumber mix on top of the lettuce top it off with micro greens and enjoy!
