One-Pot Cauliflower & Sweet Potato Curry

A super easy Cauliflower & Sweet Potato Curry recipe that can be interchanged to make any combination of vegetables. For ex: switch the Cauliflower with Eggplant and the Sweet Potato with White Potatoes to make Eggplant & Potato Curry. You can enjoy this curry with Rice, Roti or Naan. I made sourdough Naan to go with this curry and it was superb. My husband literally couldn’t stop asking what’s in it and why it tastes so good. The secret is the Oat Milk beverage. Instead of the regular oat milk I used Oat milk beverage with Maple to make this and it was absolutely incredible. If using regular oat milk, just add 1 Tbsp. of maple syrup to it.

Must Reads:

  • I used 2 different onions to make this but you can completely replace it with either Red onion or yellow. Both once cooked taste very similar. This was a pantry clean out recipe so I used what ever was available to me.
  • You can substitute the oat milk with coconut milk and remove the maple syrup as coconut milk is sweet by itself. Or use any choice of milk or cream. If using cream reduce the amount to half.
  • Make sure you use spices which are not dated and are stored in air tight containers. Over time spices lose their essence and will take on a very bitter taste.
  • You can replace the sweet potato with white potato. Sweet potatoes are healthier option and are loaded with Beta carotene. So use it if you have it available.

Cauliflower & Sweet Potato:

Start by cutting the cauliflower into medium sized florets. Don’t make them too small or too big. Similarly, peel & cut the sweet potato into bite sized pieces about 1X1 inch. Next, finely chop the onions and tomatoes.

Spices:

Gather all your spices like cumin seeds, mustard seeds, cumin powder, coriander powder, chili powder, turmeric, garlic powder and garam masala.

Broth:

For the base texture you will need Oat Milk & Vegetable Broth.

Garnish:

Chop up some Fresh cilantro.

Cooking:

Start by adding some oil to a pan and heat it up. To the hot oil add mustard and cumin seeds. Let them sizzle for 30 seconds. Add the onions to the pan and cook them until slightly browned.

Add the sweet potato along with turmeric, chili pepper and salt. Let it cook for 3-4 mins.

You want to add the sweet potato first because it takes longer to cook. Next add the cauliflower florets and for another 2 mins.

Add the chopped tomatoes along with cumin, coriander and garlic powder. Mix everything and cook for another 2-3 mins.

Next add the oat milk & mix. Close the lid and cook for 5 more mins or until the sweet potatoes are soft enough. Half way through open the lid and add the garam masala, veggie broth and continue to cook. 

Lastly, garnish with some cilantro and enjoy with naan or rice or in your favorite Buddha bowl.

Ingredients
  

  • 1 head Cauliflower
  • 1 large Sweet potato
  • 2 small White & red onion or use either one of them
  • 3 medium Tomatoes
  • 1 tsp. Mustard seeds
  • 1 tsp. Cumin seeds
  • 1.5 tsp. Cumin powder
  • 1 tsp. Coriander powder
  • 1 tsp. Chili powder
  • 1 tsp. Turmeric
  • 3/4 tsp. Garlic powder
  • 1/2 tsp. Garam masala
  • 1/2 cup Oat milk + 1 Tbsp. Maple syrup mixed Or milk of choice Skip maple syrup if using coconut milk
  • 1/2 cup Vegetable broth
  • 2 Tbsp. EVOO
  • Salt to taste

Instructions
