- Cast Iron Method: Cooking the cauliflower undisturbed in a hot cast iron pan creates beautiful charring and deep flavor without making the florets soggy.
- Brittle Texture: Keep in mind that this seed brittle is designed to be a soft, chewy brittle rather than a hard, candy-crack style brittle. Let it cool fully on parchment paper before breaking it into pieces.
- Sweet Potato Swap: Japanese sweet potatoes add a unique creaminess and rich natural sweetness to the crème, but standard orange sweet potatoes can be used in a pinch.
- Blending for Smoothness: If your beet and sweet potato crème feels too thick while blending, drizzle in an extra tablespoon of olive oil at a time until it reaches a silky, spreadable consistency.

Za’atar Cauliflower with Sweet Beet Crème!
Ingredients
Ingredients:
- 1 head of cauliflower cut into bite size pieces
- 1 Japanese sweet potato
- 1.5 medium size beets
- 2 tsp cumin powder
- 2 tbsp reduced balsamic vinegar I used TJs premade one
- Olive oil
- Salt
- 1-2 tbsp za’atar spice
- Micro green for garnish
Sesame & pumpkin seed brittle:
- 4 tbsp pumpkin seeds
- 4 tbsp black sesame seeds
- 8 tbsp maple syrup
- Pinch of salt
- Brittle this is soft brittle than a hard one:
- Toast the pumpkin seeds and sesame seeds together for 3-4 mins tossing regularly.
- Remove and keep aside. In the same pan add the maple syrup and cook until slightly bubbly and add the nuts mixture and pinch a salt.
- Mix them all together for a min.
- Place on a parchment paper and layer them into a thin layer.
- Let them cool for 30 mins.
Instructions
- Direction:
- Preheat oven to 425 deg.
- Oil beets with some salt, wrap in aluminum foil. Coat the sweet potato with olive oil and salt.
- Place on a baking tray and bake for 40-45 mins.
- Remove from oven and let them cook down.
- Once cool remove the skin, roughly chop and blend along with 3-4 tbsp oil olive, salt, balsamic and cumin powder. Blend into a smooth creamy texture. Add additional olive oil as you see fit.
- Meanwhile, heat a cast iron or an open pan until hot and add 2 tbsp olive oil. Add the cauliflowers once the oil is hot. Mix until they are coated with the oil.
- Layer them around the pan and let them cook on medium flame for 2 mins untouched. Add salt and mix them.
- Layer them evenly again around the pan and cook for another 2-3 mins. Repeat this step for 4-5 times until cauliflower is nicely roasted.
- Lastly add the za’atar spice mix and take off the flame.
- Next, take 3 tbsp of the sweet beet mix, spread it around a plate, add the cauliflower, add the broken bottle around the plate. Top off with some micro green and sprinkle some more za’atar .
