Vibrant Summer Salad with Seasonal Heirloom Tomatoes & Burrata
Ingredients

- 1 yellow/1 red heirloom tomato chopped
- 1 Persian cucumber chopper
- 1 shallot chopped into slices
- 2 burrata cheese ball
- 2-3 nectarines or peaches sliced
- 2 sourdough bread slices toasted broken
- 3-4 tbsp olive oil adjust as needed
- 3 tbsp red wine vinegar or lemon juice
- Salt to taste
- 3-4 tbsp Balsamic vinegar plus for garnish at the end
- Black pepper
- Basil & Arugula for garnish
Instructions
Directions:
- Slice and prepare the ingredients.
- Add them to a bowl along with broken bread
- Add generous amounts of olive oil followed by red wine vinegar, balsamic vinegar, salt & pepper
- Mix well, divide into 2 plates, top off with arugula, basil & add burrat and slice it open. Add generous amounts of olive oil and balsamic vinegar.
