If you grew up eating masala dosa, you know that the potato masala filling is the real star of the show. This version swaps in sweet potato for a naturally sweeter, slightly nutty spin on the classic South Indian masala while keeping all the traditional flavors that make it so comforting: mustard seeds popping in hot oil, curry leaves, chana dal, and a good hit of turmeric and chili.

It’s a simple, 25-minute recipe that works as a filling for dosa, a side for idli, or even a stand-alone bowl with rice or roti. I originally shared this one as a quick reel — you can watch the original video on Instagram – and I’m finally getting the full written recipe up on the blog for anyone who wants to save it or search for it later.

Why This Sweet Potato Masala Works So Well with Dosa

  • A healthier twist on classic potato masala: sweet potato adds fiber, beta-carotene, and natural sweetness that balances the heat from the chilies.
  • Authentic South Indian flavor: mustard seeds, curry leaves, and chana dal give it that unmistakable tempering (tadka) flavor.
  • Quick weeknight recipe: comes together in one pan in about 25 minutes.
  • Naturally vegan and gluten-free, and easily made oil-light if you’re watching that.
  • Versatile: perfect as a masala dosa filling, but just as good with idli, chapati, or plain rice.
