Asparagus Quinoa Rice

Asparagus Quinoa Fried Rice

Easy, healthy & under 20 mins Quinoa Rice
Servings 2 people

Ingredients
  

  • 8 oz asparagus cut into small inch pieces
  • 1 C of uncooked quinoa cooked as per directions
  • 1/2 C or 1/2 red bell pepper
  • 4-5 garlic pods minced
  • 1 tsp cumin seeds
  • 3-4 dried red chillies adjust as needed
  • 1 lime juice
  • Salt to taste
  • 1 tbsp cooking evoo
  • Handful of cilantro for garnish

Instructions
 

  • Heat a pan and add oil. Let the oil slightly heat up.
  • Add the cumin and garlic along with the red chillies. Let them cook for about 30 secs to a minute. Don’t let them burn, if they are burning turn the heat to low.
  • Next add the red pepper, cook for another minute, once you add the peppers adjust the heat to medium.
  • Add the asparagus along with some salt, sauté and cook for 3-4 mins on medium heat. At this stage the asparagus will cook and slightly soften.
  • Next add the cooked quinoa, along with some salt and lime juice. Mix well.
  • Lastly add the cilantro, mix and enjoy!
