A Little Background

If you have ever wondered how to get a deeply layered flavor in a homemade tomato sauce without spending hours at the stove, the secret lies in combining different tomato varieties. By mixing sweet cherry tomatoes, meaty Romas, and juicy vine-ripened tomatoes, you get a beautiful balance of natural sweetness, acidity, and body.

This recipe keeps things wonderfully simple, letting the fresh produce shine. With just a generous amount of garlic, good olive oil, and salt, the natural sugars in the tomatoes caramelize as they simmer, creating a fresh yet rich sauce.

Best of all, this is a truly multipurpose recipe. Whether you are tossing it with your favorite pasta, spreading it over a pizza crust, or simply dipping warm, crusty bread right into it, it is a versatile staple you will love having on hand.

Step 5:

Add some salt, mix, close the lid and cook for 15 mins. The tomatoes will cook in their own broth.

Step 6:

After 15 mins, remove the lid and let the sauce simmer for 20 mins on low-medium heat. Once the sauce reduces, it will be thick like seen below.

Tips & Notes

  • Control your texture: For a rustic, chunky sauce, give it just a few light pulses in a food processor or use a potato masher. If you prefer a smoother sauce for pizza, pulse a few extra times or use an immersion blender once the sauce cools slightly.
  • Tomato balance: While the mix of vine-ripe, Roma, and cherry tomatoes gives you a great balance of juice, structure, and sweetness, you can adjust the ratios based on what looks best at your local market. Extra cherry tomatoes will yield a sweeter sauce, while more Romas will make it thicker.
  • Storage advice: Keep leftovers in a sealed glass jar or airtight container in the refrigerator for up to 5 days. This sauce also freezes exceptionally well for up to 3 months.
  • Simmer gently: When reducing the sauce uncovered, keep the heat on low-medium and stir occasionally to make sure the garlic infuses nicely without scorching on the bottom of the pan.
